Abstract
Foeniculum vulgare Mill. is an aromatic and medicinal
species with interesting biological activities. In this work, the evaluation of
the antioxidant capacity of this specie collected in eight regions of the
Tunisia was been made. The main results showed that aqueous extracts and
essential oils of this species have relatively significant levels of phenolic
compounds. The analysis of the chemical composition of the essential oils of
different populations showed that the methyl chavicol is the majority compound.
The evaluation of the scavenging activity of essential oils and extracts of the
seeds of F.vulgare was been evaluated by the DPPH. method. The results
showed that the essential oil from the seeds of Teborsek rich of total
polyphenol has important scavenging activity (IC50 = 6.12g.ml-1).
