RESUME
Les céréales occupent une place importante dans
l'alimentation humaine avec plus de 65% de substances glucidiques dont
l'amidon. En effet dans les pays industrialisés, les marchés
d'amidon sont très développés avec plus de 6 millions de
tonnes d'amidon extraites chaque année. En R.D.C ce marché est
presque inexistant, non réglementé.
Les services de contrôle ne remplissent pas au mieux
leur travail en laissant les vendeurs substituer la farine de froment.
C'est ainsi ce travail avait pour objectif de procéder
à l'analyse des farines de froment pour déceler des fraudes
éventuelles et à quelle proportion la farine de froment est
substituée
Pour atteindre cet objectif, il a été
procédé à l'extraction des grains d'amidon de la farine de
froment achetée chez différents vendeurs aux marchés de la
Liberté et de Gambela en procédant successivement au malaxage,
tamisage, sédimentation, décantation, égouttage et
séchage du lait d'amidon au soleil.
Les observations au microscope ont démontré
qu'il existe réellement une substitution de la farine de froment avec
d'autres céréales et tubercules.

ABSTRACT
Cereals take up an important place in the human feed with more
than 65% of carbohydrate substances including starch. In fact, in
industrialized countries, starch markets are very developed with more than 6
millions tons of extracted starch each year. In D.R.C, this market is almost
no-existent and no-regulated.
Safety services do not perform his work by letting salesman to
substitute wheat starch.
In that, our goal is to analyze wheat starches in order to
identify eventual frauds and to determinate the proportion of substituted wheat
starch.
In order to reach our goal, we extracted starch seed from the
wheat flour bought at the market of Liberté and Gambela by successively
going through the mixing, sieving, sedimentation, decantation, dewatering and
drying of the starch milk in the sun
Microscope observations slowed that the substitution of the
wheat starch with others cereals and tubers.
