b- La diversité des apéritifs : du vin au cocktail

Les français semblent être attachés au moment de l'apéritif. Il est parfois tant attendu, qu'Annie-Hélène Dufour, décrivant l'ambiance des cafés de Provence durant cet intervalle, le définit comme un "moment où le café devient forum"^84(*). Le café devient le lieu où l'on peut, plus facilement qu'au domicile, lister les boissons consommées.
